Honey Gingerbread Cookies

Ingredients (Makes ~24 cookies):

  • 2 1/2 cups all-purpose flour

  • 1 tsp baking soda

  • 1/2 tsp salt

  • 1 tbsp ground ginger

  • 1 tsp ground cinnamon

  • 1/2 tsp ground cloves

  • 1/2 cup unsalted butter, softened

  • 1/2 cup honey

  • 1/2 cup brown sugar

  • 1 large egg

  • 1 tsp vanilla extract

Instructions:

  1. In a bowl, whisk flour, baking soda, salt, ginger, cinnamon, and cloves.

  2. In another bowl, beat butter, honey, and brown sugar until creamy. Add egg and vanilla, mix well.

  3. Gradually add dry ingredients to wet, mixing until a dough forms. Wrap and chill for 1 hour.

  4. Preheat oven to 350°F (175°C). Roll dough to 1/4-inch thickness, cut into shapes, and place on a parchment-lined baking sheet.

  5. Bake for 8-10 minutes until edges are set. Cool and decorate if desired.
